Lemon and Ginger Chicken with New Season baby Potatoes

This dish is so fresh and zingy very summery. The best part about this is nearly everything cooks together in the oven.
You can even prepare this the night before and have it ready in the fridge after work pop it in the oven. It's that easy.

Serves 4
Preparation 25 minutes including par boiling the baby potatoes
Pre heat oven to 200 degrees


Ingredients
400-500 grams of baby potatoes
4 chicken breasts sliced into large pieces
1 red pepper chopped roughly and deseeded
1 red onion sliced roughly
1 thump size of ginger grated or finely sliced into match sticks
1 large lemon sliced keep half for squeezing over the dish before cooking
2 handfuls of roughly chopped fresh
corainder ( keeping back a little to serve )
1 large teaspoon of tumeric
2 teaspoons of cumin
1 finally sliced deseeded chilli
Sea salt and fresh pepper
Splash of olive oil

Method:
Place the potatoes in a large pot
Boil the kettle and add the hot water to the pan.
Cook potatoes for 10 minutes or until they feel just a little tender when pricked with a knife.
Drain in a colander and place to the side.
Mean while the potatoes are cooking
Slice the peppers,chilli, red onion, ginger and lemon.
Place in a bowl with the chicken, turmeric, cumin, coriander and olive oil
Finally add the par cooked baby potatoes.
Toss everything together in the bowl and season.
Place in a oven proof dish and squeeze over a little more lemon juice and oil.
Put tray in oven and cook for 30 minutes.

If you are worried about cooking chicken correctly don't be if your very nervous just cut a bit of chicken and see is it cooked through.

Serve on a platter with chopped coriander and yogurt.

Coronation chicken kebabs

Perfect for BBQ or can be grilled or baked. Also if you don't have skewers just use the chicken breast whole.

Serves 4
Preparation time 10
Cooking 25-30 minutes

Ingredients:

3-4 medium chicken breasts sliced length ways
Thread on skewers
1 tablespoon sunflower oil
1 onion diced
3 tablespoon curry power
1-2 tablespoon mango chutney
4 tablespoon natural yogurt
Squeeze of lemon juice to loosen
2 tablespoon chopped fresh coriander

Method:

Heat the oil
Gently fry onion until just cooked not coloured.
Add curry powder and cook out well (otherwise the sauce will taste raw and bitter).
Take off the heat add chutney, yogurt ,lemon and corainder.
Pour over the chicken (If you have time leave for a few hours to marinade).

BBQ or grill for 20 minutes.
If your unsure if the chicken is cooked cut the middle with a knife if the knife is too hot to touch they should be done.
Failing that a kitchen thermometer will tell you it should be 75oC or over when stuck in the middle.
This is important when cooking BBQ food as people often give themselves food poising by not cooking the food enough. Not a great end to a party.

Indian Spiced Chicken Goujons Recipe

Serves 4
Ingredients:
  • 4 medium chicken breasts sliced into goujons
  • 3-4 teaspoons of mixed spices such as ground coriander, ground cumin, chili powder and paprika
  • 10 tablespoons flour
  • 2 eggs beaten
  • 150ml milk
  • 250 breadcrumbs homemade or shop bought will be fine

Method:


  1. Add the spices into a shallow bowl with the flour and mix
  2. Mix your beaten eggs with the milk in another bowl
  3. Place breadcrumbs in a third bowl
  4. Then place your bowls left to right flour, eggs, and breadcrumbs
  5. To start the bread crumbing process dip the chicken places into the flour then the egg and finally breadcrumbs
  6. Repeat the process until all your chicken is crumbed
  7. Have your deep fat fryer to 180oC
  8. To check the oil through in a piece of bread if it turns brown you’re ready to cook your chicken
  9. Fry off the chicken in small batches so you don’t over load the fryer because they will stick
  10. When they are golden brown they should be fully cooked, however if you are unsure take one out and cut it through the middle.
